Can You Freeze A Cake?

A common dilemma: the party is over, but you've still got cake left. Perhaps you over-ordered? Maybe everyone was full from the cocktails and buffet? It seems like such a waste...


But wait...STEP AWAY FROM THE BIN! You don't have to waste all of that deliciousness.



It is possible to freeze your cake. In fact, some cakes benefit from it! You simply need to be mindful based on the ingredients. But don't worry, I'm here to help.


Some cakes benefit from a spell in the freezer

Not only can you freeze a cake, but some cakes benefit from it. For example, chocolate cake improves for being frozen.


You can freeze a chocolate cake for up to three months if wrapped properly. Don't be surprised if it tastes better the second time around.



Are there any cakes you cannot freeze?

You can freeze pretty much any cake, but you need to be incredibly careful with cakes containing fresh cream.


Fresh cream can split when holding. If you are contemplating freezing a cream cake, make sure it is wrapped to perfection but don't be surprised if things still don't go to plan.


Dairy products don't hold up as well. When the cake defrosts, the cream can weep, which ruins the texture of the bake.


How to wrap a cake for freezing

Use plastic wrap to provide a tight seal, which will hold in the cake's moisture and protect it from freezer burn.


You only need to use a single layer if you are freezing the cake for three days or less. Surely I can just put my remaining slice of cake in the fridge for a few days? You can, but it will dry the cake out! A freezer is best.


If you are freezing a cake for more than a few days, make sure you wrap it in several layers.


You can use further layers of plastic wrap. Or, after the initial plastic layer, use foil or a freezer bag.


No matter your choice for the second layer, you can store your cake for up to three months with this approach. Make sure you label the cake clearly with the date it was frozen, so you don't forget how long it has been there.


I personally like to use zip-lock freezer bags because you can use them again. Just make sure you have pressed out all of the air before sealing!


A little tip: Place your cake on a cardboard cake round

If you have a cardboard cake round, it is a good idea to place your wrapped cake on top of this in the freezer. This will help keep the bottom flat, which can be a problem in freezers that have wire racks as opposed to flat shelves.


Cardboard rounds also make it possible to stack cakes, saving you valuable freezer space.


How do you thaw a frozen cake?

Dealing with the condensation that forms is the main challenge when thawing a frozen cake. Condensation will form on the inside plastic. A steady hand is needed to remove the plastic wrap without knocking this condensation back onto the surface of the cake.


On balance, thawing the cake wrapped is usually best. If you do notice that there is some moisture on your cake, use a clean paper towel to blot it gently.
